Our 0-mile vegetable garden: the heart of sustainability

We have a zero-mile vegetable garden just a few steps from the Wine House, where we grow vegetables, aromatic herbs, berries, flowers, and produce honey – all in full harmony with nature. Our dishes bring the fresh flavour of local products, reducing environmental impact and supporting biodiversity.

We are committed to reducing our energy impact by using renewable energy and solutions that promote savings. For example, our building is powered by district heating that uses local solar panels, contributing to responsible energy consumption and low emissions.

We buy from suppliers who share our commitment to the environment, choosing fresh and local foods. We also use eco-sustainable products for cleaning, always with an eye to quality and respect for nature.

Plastic-free and waste reduction

We have eliminated plastic in both the restaurant and the rooms. Our menu changes every day to minimise food waste, and we donate excess food to those in need.
